Kingston’s crunchy sweet carrots are in season
during the summer and fall when they are the
freshest and most flavorful. Our carrots have a
thick, fleshy, deeply colored root, with feathery
green leaves.
Kingston carrots are rich with Vitamin A
and are an excellent source of antioxidant
compounds. These antioxidant compounds
help protect against cardiovascular disease and
cancer and of course promote good vision.
The wild carrot is indigenous to Europe and
parts of Asia. The wild carrot has a small,
tough bitter white root; modern domestic
carrots have a swollen, juicy sweet root,
usually orange in color. Carrots originated in
present day Afghanistan about 5000 years
ago, probably with a purple or yellow root.
Nature then produced mutants and natural
hybrids, crossing both with cultivated and wild
varieties. It is believed that purple carrots were
then taken westward where yellow mutants
and wild forms crossed to produce the orange
color we know today. Dutch growers developed
these mutant orange carrots to be sweeter and
more practical.
