Available from July through April, this golden
potato, known as the the Yukon Gold, is
commonly used in many homemade dishes.
Kingston’s Yukon Gold potatoes make excellent
french fries and are great served mashed. These
potatoes are slightly flat and oval in shape with
light gold, thin skin and buttery yellow flesh.
When picking out a Yukon Gold, the more
intense the yellow color of the flesh is, the
higher the vitamin A levels it contains. This
vitamin rich offering promotes good vision,
healthy skin, and improved immune systems.
The best part is, you will never have to peel
potatoes again… because the peel contains vital
amounts of potassium for your body.
Yellow-fleshed potatoes are common in
Europe and South America. In fact, yellow
flesh potatoes are actually considered the norm
in most countries outside North America; so
naturally, immigrants to North America were
accustomed to and preferred potatoes with
yellow flesh. The Youkon Gold was developed
by the University of Guelph in Canada by
potato breeder Dr. Gary Johnston and was
sponsored by Agriculture and Agri-food
Canada, a research team who succeeded in
cross-breeding a North American white potato
with a wild South American yellow-fleshed
variety. The result was the Yukon Gold, the
first Canadian-bred potato to be marketed and
promoted by name.
