Mesclun, otherwise known as Spring Mix, is a classic green salad that Kingston serves up nationwide complementing a variety of dressings. This leafy salad contains a mixture of young leaves and shoots of wild cultivated plants, including endive, dandelion, arugula, lambs lettuce, oak leaf and others. Edible flowers are sometimes added to the mix. Spring Mix is a great source for vitamin A which helps support a healthy immune system. In addition to containing more fiber than iceberg lettuce, Kingston spring mix offers more natural sources of soluble and insoluble fiber.

Originating in the Provence region of France, Spring Mix salads otherwise known as Mesclun fall into two broad classes: mild and piquant. The milder blends incorporate more lettuce; mixing together several different varieties, while the piquant class include more peppery cresses and tangy mustard greens.
